Un kilo de farine mi-blanche moulu avec la pierre \u00e9tait compris donc j&#8217;ai d\u00e9cid\u00e9 de compar\u00e9 avec la farine Migros TerraSuisse que j&#8217;ach\u00e8te d&#8217;habitude.<\/p>\n<p>La recette \u00e9tait un simple pain au levain avec faible hydratation:<\/p>\n<p><b>Ingredients:<\/b><\/p>\n<ul>\n<li>300g farine mi-blanche<\/li>\n<li>62% eau<\/li>\n<li>16% levain<\/li>\n<li>0,5% levure<\/li>\n<li>2% sel<\/li>\n<\/ul>\n<p><b>Recette resum\u00e9:<\/b><\/p>\n<ul>\n<li>10 min autolyse<\/li>\n<li>10 min mix niveau 1 + 5 min mix niveau 2<\/li>\n<li>3 heures repos (on est aller voir le filme <a href=\"http:\/\/www.imdb.com\/title\/tt2278871\/\" target=\"_blank\">La Vie d&#8217;Adele<\/a>, vivement recommand\u00e9)&nbsp;<\/li>\n<li>Rabattre la&nbsp;p\u00e2te et faire la forme du pain<\/li>\n<li>1 heure repos<\/li>\n<li>Mettre au four \u00e0 250\u00b0 pendant 10 min avec un peu d&#8217;eau bouillante dans une plaque dessous<\/li>\n<li>Baisser le four \u00e0 200\u00b0 pendant 35 min<\/li>\n<\/ul>\n<p>Dans les photos on voit une p\u00e2te assez diff\u00e9rent depuis le d\u00e9but. La farine TourneR\u00eave est plus fonc\u00e9 et les grains plus grands.
